Background Lytic bacteriophages are bacterial viruses that upon infection kill their host cells and therefore have re-emerged as biological control agents of bacterial pathogens, particularly in the field of food related infections. Here, we investigated the stability in different food matrices of five phage isolates capable of controlling the foodborne pathogen Salmonella enterica serovar Enteritidis (SE). Results We found that two phages, originally isolated from food sources, were up to 5 logs more stable than three phages isolated from sewage, in ten food matrices (fresh and processed) at both 4°C and 18°C. Exploration des communautés virales thermophiles dans les écosystèmes chauds des Terres australes et antarctiques françaises ArchiMer

Viruses thrive in all types of ecosystems where life is found. They represent the most abundant biological entity of our biosphere. Though several studies have been conducted on viral abundance and dynamics in mesophilic aquatic ecosystems, these aspects remain largely unexplored in extremophilic environments, such as hot springs. In this study, prokaryotic and associated viral communities of the French Southern and Antarctic Lands hot springs were explored. First, prokaryotic cells and Virus-like particles (VLP) were enumerated in several terrestrial and inshore hot springs. Lytic bacteriophages as a potential alternative to control Staphylococcus aureus PAB

Abstract: The objective of this work was to characterize autochthonous bacteriophages and to determine their lytic activity on Staphylococcus aureus. Six phages were isolated from dairy barn flush water through enrichment cultures with three S. aureus strains. All phages were characterized by DNA digestion by restriction enzymes and sequencing of the DNA fragment encoding endolysin. Each phage was tested against 100 S. aureus strains isolated from bovine mastitis and from dairy products using the lysis-plate method. The sequences of the endolysin gene were highly conserved, with nucleotide similarity higher than 99% among the isolated phages.
